I assume you're interested in the artist route, based on the ones you listed.
Here's the full list:
Semester 1: Art Fundamentals - 3d modeling, colour theory, digital painting, texturing, uv mapping etc - the basics of art in a 3d context
Semester 2: Sculpting - zbrush, starting with props and then character sculpting, retopologizing, map baking
Semester 2: Environment Art - based on a brief, create environmental assets (exterior and interior house), trim sheets, tilable textures, optimisation techniques, lighting, visual effects (particles/fog/fire), visual research - building a world with your class
Semester 3: Procedural art - procedural textures, modular assets, modular textures - how to create a lot of 'stuff' using as few building blocks as possible
Semester 3: Animation - 3d animation (pretty self explanatory :D) - learning how to animate in 3d
Semester 4: elective module - rigging - creating rigs for cars/characters/etc - you have a character, how can we make it move?
Semester 4: elective module - interactive worlds - adapative audio, shaders, scripting - turning a 'dead' world in to one that's alive.. think of moving grass, wa'ah, dissolving dead enemies, fancy stuff
Semester 4: elective module - 2D Art - environmental concept art, 2d animation, etc
